Being 8" wide and a offset of +35 which is generally and offset that EVO's use you may have fitment issues.

Advanti Wheels - Advanti - V3 Vago (gloss black)

Thoughts on these for a 2005 non-STI? Will the +40mm offset be fine?

yeah 17x7 +40 should fit fine

Personally i dont see the point of changing rims unless you are going to up a size in both diameter and width. I've always seen the main purpose being able to run better/wider tyres.

For a gdb i would be looking at 18x8 as a minimum

Just bought new tires and have been told the old rims are in bad shape and in need of replacement. Might just have a look around and see if I can find some stock 17's.

What's a pretty safe range or closest to the standard sti rim.

17x7.5? with a offset of ....?

iirc +55, +53, +50 and +48 are all stock offsets on that sized rims for various Subaru models, so any of those should be fine but since you've got brembo's make sure the spokes will accommodate them otherwise you'll be in trouble!
