Also, I recommend changing the cash over in the country you're visiting.. you ALWAYS get a better rate.

For safety, if you want to change $500 or so over before you leave (and then do the rest in the country you're visiting), go to the City and visit the 5 or so money exchanges within 500m of each other in the malls.. there are a couple in Murray St mall, one at Piccadilly arcade, and two near London Court on the Hay St Mall side. You'll get hugely varying rates from all of them, so go with the best one. I find the one inside London Court is the best rate, and don't let them charge you commission.. tell them that one of the other ones is doing the same rate minus commission, and they'll waive it for you.

DON'T go to your bank to change the money, all they do is go to the nearest Travelex and then charge you the standard Travelex rate plus a fee.

Well I have heard that the Casino is one of the best places to convert foreign cash to AUD (as they want you to spend the money in the casino....), but I'm not sure if it works the other way.
