a new project i have just undertaken

Dry cured bacon

I will keep updating with pictures

but for now











will take about 6 days to cure, then will go for a light cold smoke.!

Quite impressive.

So will that kind of work out to be like a bacon jerky/biltong after it's cured and cold smoked?

Breakfast bacon sticks in the car on the way to work? genius.
