Any recommendations for shipping a car to Sydney or Brisbane?

Have a look through this page. This bloke bought an STi foz in WA and had it brought over to QLD via sea. He seemed to rate the speed and service very well, and was able to track the progress online etc.

+ 1 for CEVA. Have used PRIX CAR also but takes twice as long as CEVA.
