8.5 will be how wide ur rim is. 240/235/275 will be the width of your tyre.
Edit: For a 8.5 rim, you wouldn't generally go more than a 245, 235 is sufficient.

Offsets vary for different rims, so each case will require a different offset. Speak to your tyre store, they can get this info from the rim manufacturer. For example in one design of Rays a +45 would have been sufficient on my 06 sti, in another design +50 was the minimum.
