In the case of HDR it is actually better to shoot in JPEG and let the camera judge the exposure.
And with most digital SLR's there is a 'exposure bracketing' mode where you set the camera up on a tripod and then select the exposure range and one shutter press will fire 5 shots of varying exposure. Say -2, -1, 0, +1, +2.
