And with most digital SLR's there is a 'exposure bracketing' mode where you set the camera up on a tripod and then select the exposure range and one shutter press will fire 5 shots of varying exposure. Say -2, -1, 0, +1, +2.

Yep, got that all sussed out. General consensus seems to be 1 RAW pic isn't the best method.
