I personally wouldn't go any tougher then a full face sprung organic. The springs and the material are a little more forgiving in absorbing some load when you dump it. Also, food for thought, a LOT of people break gearbox's with the standard clutch, and lots of people use standard boxes with a lot more power and a tough clutch with no drama, so I guess the biggest factor is the driver.

With the clutch in my car, drivability remains stock, not hard at all to take off (this is with a lightweight flywheel too) and the pedal requires the same effort to operate as stock.
