Just a thought, are you sure it's not that section of loom that's dodgy/causing you issues? Only reason I ask is because the crank angle sensor and water temp sensor are so close to each other, and in the same loom, your crank sensor may not have been dodgy, but my messing with the wires, you fixed it, but in turn have now fingered a temp sensor wire.
