as mattmy99 said - handling & brakes (no point having power if you can't pull it up or control it), besides once you start tinkering with the engine etc. it can become a costly exercise as i'm sure a few on here could vouch for (=
keep an eye on the for sale section, you can pick up some pretty good second hand stuff from there.
