I don't think they will bat an eyelid at a 250-300hp WRX driven by a mature aged driver. They'll always consider it on a case by case basis when they put you on hold and talk to their underwriters.
Also, they will probably have the factory power rating in front of them. Say for example you were to insure a MY09+ with them, their info probably shows a power rating of 192kw (iirc). If you tell them your car has 200kw after an exhaust and tune they're not going to know that measurement is at the hubs/wheels as opposed to the crank.
