If you look at the compressor maps there are all these efficiency regions, which makes it look like a thumbprint. The boost level will hit its maximum efficiency throughout the rev range giving the peak torque, after that point as the revs increase the turbo moves out of maximum efficiency and then the torque will taper off.

Something for fun is to see the plot when you smash huge boost in to a turbo, if you push hard enough you will essentially end up with a triangle as your plot, as you will reach the peak efficiency for that level of boost and then rapidly drop off. Gives you a higher peak value, but does not give you a good driveable car.
