set the camera to bulb it should be under the "M" setting. this will allow you to hold open the shutter for as long as you want, i would think you will need a remote though as you wouldnt want to stand there for 30 minutes holding the trigger.

i haventtried the long bulb exposures yet.
use an ISO of less than 200. i spose it is all trial and error like anything really.

good luck with it and post up the pictures you get. good or bad.

i know the 350d cant do such long exposures easily, they might have added it to the 400 though i doubt it... keep in mind doing them will probably juice a ton of battery.

I think it would be easier just taking many shorter exposed images and ADD ing the images together at the end.

the 300D/350D/400D/450D can all do an exposure for as long as the battery will last.

Buy an ebay shutter release for like 5 bucks as the infrared option will be a pain in the ass and may run out of battery. You can always just make one from a headphone jack and a switch. Its very simple.

Heaps of DIY instructions on the web like this one.
http://www.proctorphotos.com/article.php?id=21

Most serious astro photographers stack many many 30 sec exposures in photoshop to bring the noise levels down. You would need a timer release cable for this. Heaps of tutes on how to do this online too.

Yeah What Jamie said, if you want best results you gotta stack lots of shorter exposures to reduce noise, your gonna have quite a bit of noise at 30 min, that link you posted Mark those shots have heaps stacked!!
