On the references ribbon, in the table of contents section click add text and you have options like do not show in table of contents, Level 1, Level 2 etc. Your styles (i.e. header 1, subtitle etc.) have default settings for how they will appear in the table of contents but can be over-ridden using that add text drop down.
But ultimately for figures and tables you should use the insert caption button on the reference ribbon. Keeps it out of the table of contents, keeps the table and figure numbers automated and allows you to create automatic lists of figures and tables just like automated table of contents
