Yeah I dont go over 12 shots when stitching especially with the 5d mkII.

Yeah, 21MP per photo would need a bit of grunt

if you convert down to jpg before you stitch that saves a lot of memory. Also you could probably just set the camera to 10mp mode or some lower than max setting and still end up with a massive landscape that could print a1+ posters at 600dpi.

my macpro desktops a tank handles it fine

i thought you just said that shit bucket couldn't do more than 12 images? :P

haha, yeah It can do more but usually dont need to shoot more then 12 shots to get the shot I want.
