There's some sort of 'eBay app' you can buy that won't allow you to be outbid, even at the last second.. Maybe use that. Sucks when it happens, it's not always possible to watch the bid ending live.

Google "bid sniper" or "auction sniper"
Programs is designed to place your max bid(pre-set by you) literally milliseconds before the auction ends...

What if the other person you are bidding against has it as well - sudden death playoff for the draw?

Very rarely more then one person in an auction will be using the software- i have only known a few people to miss out on auctions using it- I guess if it happens the better software will win...
