Best investment for anyone going E85 will be a flex sensor - expecting it to be perfect 104 plus ron every time from a station is foolish - as is expecting every tank of 98 to be 98

Cheap insurance in the long term. The consistency will be interesting, but as TJ said it's nothing new from the fuel we have now.
Do we know at this stage if anyone besides UNITED will be going E85?

Correct me if I'm wrong, but doesn't a Flex sensor only measure ethanol content, not RON?

No, but it will minimise it.
It's not a huge problem in modern fuel tanks with closed vent systems, with the car garaged.

Maybe some input from one of our enlightened tuners could field this. Some food for thought. Keep in mind I'm no expert & have had no experience with E85, so these are just my thoughts only, based on what I know about aviation fuels & fuel farms, as well as a limited experience with alcohol fuelled drag cars many years ago. There are couple of issues that I think may cause some problems, however there may be things that have been put into place to combat these that I'm unaware of. The first would be the storage tanks at the servo's. As water won't mix with petrol it will settle to the bottom of the tank where it can be removed if it becomes excessive.(Hence why we don't fill when a tanker is at the servo). However as alcohol attracts water this causes the water to stay in suspension. If the servo's have fitted new tanks for the E85 then this may not be a great problem, however it's more than likely most servo's will just convert a current tank. This tank will have sediment/moisture at the bottom, some of which will be drawn into the fuel. Possibly not in enough quantities to affect vehicle performance, but brings us to the second issue. It means the fuel has already started to degrade when you put it in your tank. Again, probably not an issue if you use it straight away, but may become an issue if left to sit for a few weeks. Something to weigh up is if the cost to convert to run on E85 is the best "Bang for Buck" for you. Cheap horsepower usually never is.
