Best case scenario...thermostat
Worst...head gasket (any black stuff in the header or overflow tanks?)
Make sure they use OE Subaru coolant too.

Let the car sit and Idle until the radiator fans kick in but first make sure the radiator is full, maybe have someone sit in the car to make sure it doesn't get too hot....get a torch and look for any coolant, it's usually easier at night to spot any problems like small leaks, there are coolant hoses everywhere so anything that looks like a black hose check it, under the manifold, at the back and each side and of course the front, it will also be easier to see steam or the smell of coolant burning at night too. the fans not working could also be a problem, if they don't kick in after about 10 - 15 min check the plugs at the bottom of the radiator.

Cracked hose or top tank is split. Check that themostat as well, if too much pressure is building up, it will let go at the weakest point. Relatively cheap to replace! I'll still keep an eye on the temp gauge for the next couple weeks just to be sure.

Also see if the fans are coming on...faulty fan sensor? Then again it could be caused by the themostat not opening...so the sensor isnt getting the right readings.

just have to baby it until you get it fixed, keep the heater on in the car (hope u dont need to loose weight cos it was like a sauna today) and never let the turbo spool...

99.9% sure Subaru's have a constant flow heater core without a tap which closes so all you are doing is heating up the car by opening the vents, no help whatsoever.

Great advice thanks everyone! I topped up the water yesterday afternoon and there's been no action since then so I guess that's a good thing. Have it booked in for Friday just to check everything out
