Just a butcher @ Belmont Forum. To get bulk meat on the ribs, you want spare ribs. Most places mainly sell baby back it seems.

Sometimes I find spare ribs aren't very lean which puts me off sometimes. Yet to find rack in Perth like that.



Eg:



Ribs and Rumps in Sydney to big racks.

After 3hrs in oven on low heat, 90c or so.



Added basting:



May add a touch of bourbon in here to see how that goes.

Back to oven for another 3hrs then finish on grill hot grill quickly.

Went there tonight... Was more reasonable than above.
Meat was good, nice and smokey but still not authentic.

It was a nice dinner though, pretty casual. The beef brisket was certainly the highlight. Their pulled pork was pretty good too.

Service did leave a lot to be desired, it was kinda funny in a way. Their waiters were European, very 'relaxed' service. Took us a long time to flag one down after we had eaten to ask for dessert. Then same again to get the bill, which came in an Amex holder... Although when we went to pay with an Amex card, we got told that button on the till didn't work.

Lols were had.

Don't go in expecting too much, but I would consider going again.
They have a rib challenge, eat 2 full racks and a x-large special fries in 20 mins and you get it half price. Maybe next time.

I'm glad you had a better experience than me.

One of my friends took the challenge and finished the meal in 11 minutes! Although, it's $70, and they only knock off $30. They give you a free beer though.
