I must concur with Davo. I sampled his ribs, sauce and beans and OMG best ribs in Perth this year by far.

I cooked for additional 1.5 hrs after Dave had smoked them and also basted them.

The hickory smoke does wonders for the taste imo.

I normally smash A full rack at resturants but i was struggling to polish off 3/4 of a rack this time round just so much meat on them...

Ah Tino - the "too much" GTB rib cut. Been working with Frank on this one for a while now.

Gotta love Frank at Gourmet Meats in Wray Ave.

EDIT - I assuming that Tristan got the ribs from Frank.

And its already gone out of my belly... booooooooo

Davo was saying that to get fresh we must order big.. So i think a few of us ordering 10-15kgs each should make that happen.. Im looking to get a smoker also Davos came out really good. Might just get something bigger though.. haha
