I'll throw in my 2 cents worth.
At the risk of sounding like an old "fuddy-duddy", let's keep the racing on the track. I think what you are looking for is what we do out at Beverley (about an hour out of Perth) and it's called Autocross. Try visiting the BORMSA website (Beverley Off Road Motor Sport Association). There are plenty of local rally drivers that use it for shakedown testing. When we race, we have 2 cars that go head to head. There's virtually nothing to hit and it's a great place to hone your dirt road skills. There is also some youtube footage to check it out.
There is currently no racing due to fire risk, but it starts again in about April. It's CAMS sanctioned and it's one of the cheapest CAMS affiliated clubs you can join. Racing for the day is about $70.

i love off roading....but im fortunate enough to have a work land cruiser ute that allows me to do so...

other then that check out some the the action as mentioned above.... sweeet

this thread is abit old but if your still wondering about whether or not to take your wrx off road go for it!

Of course it has its risks but if you find a wide open space and just drive to your limits its great fun I bought my wrx purely for this.

I have some pictures is anyone is interested. Although where I live there is alot of open spaces with dirt so it does make it alot easier.

I'll hopefully have more soon but im currently half way through changing the timing belt and water pump etc and then after that ill fit the suspension and mud flaps!
