well i have been doing a few bbsq's lately, had a few boys round for a rib night.

here are some before





on the bbq and almost cooked



bascly did a dry rub and a wet rub, the wet was a lot more of a St Lewis style
when doing 20kg the ribs needed more time on the bbq probably up to 8hrs


work also asked me to do another BBQ so i suggested brined chicken, pork belly & St Lewis style ribs

the ribs marinading


all served up and ready to rock, pork belly was cooked for 5hrs then finished in the oven for 45min on as hot at it will go.





both were good days.
