I doubt it will get that hot. But we will see and change it out if needed.

Awesome setup - just wondering if you have any advice on where to get smoking woods in Perth please?

Assuming classic smoking woods you can try BBQ stores and Bunnings for ones like hickory, mesquite, and apple on occasion. Jarrah smokes well in moderation.

Just ensure you avoid softwoods such as pine.

Thank you. Yes, I am looking for apple, cherry, mesquite & hickory, and was hoping to find it in greater quantities (and lower prices) than I've seen at BBQG or Bunnings.
