Any reason why you didn't think of taking it to STechnic/MMS/All Star, et al for a check?
The wait was simply too long. I have an appointment with Stechnic but they said earliest was 16th and thats when I am booked in. Mms said 22nd was earliest. Did what i could. I want to clarify the car is awesome and I dont believe there are any major issues. My appt on 16th will
Hopefully point out and minor things but like I said, nothing else I could do at the time and I feel confident its not a catastrophic issue. Car is an 03 in rally blue (best colour IMO) and only had 125k kms. Was a good buy for the most part. Car facts report came back clean and log books showed car was serviced by Subaru regularly and at the required intervals AND always 1-2k kms before that service was due. See where I am going?

No one hopes the vehicle turns out to have major issues and yes we all see where you're going, but at the same time most if not all of us have known people bitten by the "trusted car yard sales pitch" "" she's the cleanest well kept car I've seen in ages"" hence why you have a fair few saying....why didn't you get some mechanic somewhere check it out. End of the day most of us don't have $20+ to throw at a car then another $5 - 10k straight after cause shits hit the fan 2 weeks after we've taken the car home. Best of luck, hope those couple of things turn out to be nothing serious.

Maybe the problem is worse than it seems to me, but revs dipping on idle; not the aircon/thermo fans kicking in is it?

and for the second issue, have you pulled the spark plugs out and made sure they're not fouled? how old are they? and what brand? maybe the previous owner threw some cheapo ones in just before selling.

Dealer is going to fix issues (supposedly). From the dealer: hi travis, I did notice when I was driving it that the revs dropped occasionally but it didntworry me as it only happened very rarely. I spoke to my Subaru guru and you are on the right track with the maf sensor and the oil smell is probably the lower rocker covers as the always leak as they are laying flat being a boxer motor. if you can drop it of to me and leave it for a day or 2 but please give me at least 2 days notice as they can be busy.

I was right on the money with the rocker covers causing the burn smell
Make sure they do the full rocker cover service as per subaru recommended servicing... Subaru supplies a pack with all the parts and also the spark plug seals which get changed as part of this.
Just make sure they source the oem pack from subaru parts. Im assuming that's an AHG car yard, if it is they usually source the right stuff, if not ahg then I'd mention it to them so they don't take you for a ride.(I'd mention it to ahg too anyway, look like you know your stuff and they won't try bullshit you!)

edit: btw dealer saying that rockers always leak: no they don't always leak, only after years of driving when the gaskets start to wear away and not seal properly. The dealer should do this service for you now on stat warranty else it will cost you ~600+ later.
