Well every car I've seen the oil temp is quite close to the water temp. In all Subaru's I've seen the temp hovers round the 85 degC. After hard acceleration, it goes up to over 90degC

I've got a genuine STi short shifter for sale.
Its for 5-speed, so WRX only and fits MY08 to MY14 only.
I tried to fit it to my Bugeye but it doesn't fit as the rods are longer...

Was it doing it before you installed the short shifter? A grinding noise from the gearbox usually indicates something worn. Its really hard to diagnose something like that without seeing the car....
